Monster Cookies

There’s something so comforting about a homemade cookie, and these monster cookies have become a fast favorite around here. A few weeks ago, I baked a couple hundred (yes, really!) and delivered them to our neighbors—and now I’m finally sharing the recipe because so many people asked for it!


These cookies are thick, chewy, and packed with goodies like mini M&M’s, chocolate chips, and peanut butter. They’re everything you want in a cookie and then some. I love making them in bulk—perfect for holidays, thank-yous, or just a surprise doorstep treat.



Ingredients:

    •    ½ cup unsalted butter, softened

    •    1 cup packed light brown sugar

    •    1 cup granulated sugar

    •    3 large eggs

    •    1½ cups creamy peanut butter

    •    1 tbsp vanilla extract

    •    4½ cups old fashioned oats (quick oats work too!)

    •    2 tsp baking soda

    •    ½ tsp salt

    •    1 cup mini M&M’s

    •    1 cup semi-sweet chocolate chips

    •    ½ cup mini chocolate chips


Instructions:

    1.    Preheat your oven to 350°F and line a baking sheet with parchment paper.

    2.    In a stand mixer with a paddle attachment, cream together the butter, brown sugar, and granulated sugar for 1–2 minutes.

    3.    Add in the eggs, peanut butter, and vanilla, and mix for another minute until smooth.

    4.    Scrape down the sides of the bowl.

    5.    Add the oats, baking soda, and salt and mix until almost combined.

    6.    Stir in the mini M&M’s, chocolate chips, and mini chocolate chips.

    7.    Scoop dough into 3-tablespoon-sized balls and place on your prepared baking sheet, leaving space between each.

    8.    Gently press the tops to flatten into thick disks.

    9.    Bake for 11–13 minutes, until edges are golden and set.

    10.    Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
